Salty, sweet and soft in perfect balance – this is the cake for those who want to offer something different but of course.
Ingredients (8–10 pieces)
Chocolate cake with salted liquorice
-
150g butter
-
2 eggs
-
2 dl brown sugar
-
1 cup cocoa
-
1.5 dl wheat flour
-
1 teaspoon vanilla sugar
-
1 teaspoon baking powder
-
1 pinch of salt
-
80 g coarsely chopped Finnish salt liquorice (regular classic candy bar)
Cream cheese frosting
-
200 g cream cheese
-
1 dl icing sugar
-
2 tsp lemon juice
-
1.5 dl whipping cream
Topping
-
A few whole pieces of Finnish salted licorice
-
Grated lemon peel or thin strips of zest
-
A little crushed chocolate or flaked salt
Here's how you do it
1. Bake the cake
-
Preheat the oven to 175°C. Butter and flour a round tin (20–22 cm).
-
Melt the butter. Beat the eggs and brown sugar until light and fluffy.
-
Mix dry ingredients in a bowl. Fold into the egg mixture.
-
Add the butter and stir until smooth.
-
Finally, fold in the coarsely chopped salted licorice.
-
Bake in the middle of the oven for about 20–25 minutes. The cake should be gooey in the middle. Let cool completely.
2. Whip the frosting
-
Whip the cream in a bowl.
-
In another bowl: stir together cream cheese, icing sugar, lemon juice and possibly licorice powder.
-
Carefully fold the cream into a smooth, airy cream.
3. Decorate and serve
-
Spread the frosting over the cold cake.
-
Decorate with whole pieces of salted licorice, a little lemon zest and crushed chocolate or flaked salt.
-
Serve immediately or refrigerate for an hour for a firmer surface.
Finnish finish
This is a cake that grows in flavor – it's even better the next day. Serve with strong coffee or just as is, on a rustic platter. Simple, salty and confident.
